Put a twist on your regular muffin recipe by making Ham & Cheese muffins! Plus we used Michigan Made products!
Corn muffins go great with a hot bowl of chili and these amped-up corn muffins are an even better match. Our corn muffins have ham and cheese and some fresh veggies and lentils. Yes, lentils. Okay, here we go. This muffin recipe is easy to make and great for breakfast or just as a snack! Plus, the fresh veggies and lentils qualify this muffin recipe to be healthy! lol
Ingredients for Ham & Cheese Muffins:
- 2 boxes of Jiffy Corn Muffin Mix
- 1/2 cup of lentils
- 1/4 cup of diced ham
- 1/4 cup of Green Pepper, diced
- 1/4 cup of Red Pepper, diced
- 1/2 cup of cheese
- 1 stick of sweet cream butter

I’m a huge fan of lentils! I make the green ones all the time with black beans. I’m so impressed with this recipe with the lentils, ham and cheese! Wow. I definitely want to try this!
