Homemade Meatball Recipe
I love this recipe- homemade meatballs! It is so quick and easy, I have served these meatballs with mashed garlic potatoes, and in all kinds of pasta with a good tomato sauce or even Alfredo sauce. I have even served them with rice and gravy.
Homemade Meatball Recipe:
4 to 6 servings; makes approximately 10 to 12 meatballs
Ingredients:
2 pounds ground beef
2 eggs
1 cup Japanese bread crumbs
1 tablespoon minced garlic
1 tablespoon dried basil
1 tablespoon Worcestershire sauce * Note: I prefer Lea & Perrins Worcestershire Sauce
2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon freshly ground black pepper
4-6 tablespoons of good olive oil
1/4 cup grated cheese like Romano or Pamigiano-Reggiano *Note: Although the Pamigiano-Reggiano is more expensive it is well worth the added expense, it lends to the meatballs a richer flavor.
Directions:
Preheat oven to 400 degrees F
Mix all the ingredients in a bowl and mix with hands until well blended. Form beef mixture into balls about 3 to 4 ounces each. On medium heat brown 4-5 meatballs in a skillet at a time using 1 tablespoon of olive oil per batch. Turn meatballs often to brown evenly. Place browned meatballs in a Dutch oven or casserole dish, cover with lid and finish cooking in the oven, about 15-20 minutes. Remove from oven and check to make sure meatballs have cooked completely through. Remove lid and place back into oven for 5-10 minutes or until lightly browned. Remove from oven and let sit for 15 minutes to let some of the juices absorb back into the meatballs. Drain remaining grease and serve with your favorite pasta and sauce.
