Linguine With Alfredo, Vegetables, Herbs and Rib Meat
One of the most exciting and fun things I like doing is looking into my frig and pantry and throwing a meal together. Tonight I made delicious meal using items we had on hand and fresh from our garden. There was a half rack of Baby Back Ribs from a barbeque the day before. I also used radicchio, fennel, green onion, garlic, parsley and sweet onions to add some heft and healthy stuff to this evenings offering. Finally, I brought it all together with some standard issue staple items. Olive Oil, black pepper, Kosher salt and cheese. With some fresh lettuce from the garden for salad this meal had the boys digging in and filling up on Linguine With Alfredo, Vegetables, Herbs and Rib Meat.
Recipe:
Oven:
Pre-heat oven at 350 degrees
Meat:
2-2 ½ lbs. Rib Meat
Seasoning:
Kosher Salt
Cracked Black Pepper
Herbs:
Thyme Minced 1 tablespoon
Green Onion ¼ Cup Chopped
Minced Garlic 3 Bulbs
½ Cup Parsley Chopped
Vegetables:
1 Medium Sweet Onion Chopped
1-Cup Radicchio Chopped
½ Cup Fennel
Other:
Shredded Kraft brand Italian Five Cheese, about 1 Cup
Linguine Pasta 5 lbs.
Bertolli’s Alfredo Sauce 1 Jar
Olive Oil 2-3 Tablespoons
Directions:
With a sharp knife remove rib meat from bone. Set aside.
Herbs:
Chop and mince all herbs and vegetables and set aside.
Stuff a couple of teaspoons of the herb mixture into each Pork Chop. Make sure you In a large cast iron skillet heat 2-3 tablespoons of olive oil until it starts to smoke. Add chopped onions, fennel and sauté until softened, about 5-7 minutes, then add radicchio, green onion and garlic and sauté for 4 minutes more. Remove from heat and set aside.
Bring water to a boil in a large stockpot and cook linguine following the instructions on the package. Drain al dente pasta. In a large Dutch oven add pasta, olive oil, salt and pepper to taste. Add Alfredo sauce, rib meat, vegetables and herbs and cheese, toss well and bake in a pre-heated 350-degree over for 15-20 minutes. Top with freshly chopped Parsley and serve.
