Meijer Meal Plan Week 8/19: 6 Meals For $34

It’s a new week of sale at Meijer. This week, the 10 for 10, get the 11th free sale is going on, and we have quite a few meal plan ideas to go along with it!
Meal 1: Roasted Chicken with Steamed Broccoli $4.96
- 1 4 lb whole chicken, rinsed and giblets removed
- Salt and pepper (pantry)
- Garlic powder (pantry)
- 2 broccoli crowns
- Butter (pantry)
Directions: Place the rinsed chicken in a roasting pan. Season inside and out with salt, pepper, and garlic powder, to taste. Cover and bake in a 400°F oven for 1 hour or until a thermometer reads 165°F when placed in the thickest part of the thigh (not touching a bone). Remove from the oven and let rest 10 minutes. Steam the broccoli in a pan or microwave to desired doneness. Serve with butter. Reserve and refrigerate leftover meat and the pan juices for the next meal
Meal 2: Easy Chicken and Biscuits $2.69
- Leftover chicken, shredded
- Leftover juices
- ½ C flour (pantry)
- Water (pantry)
- 1 bag Meijer frozen mixed vegetables
- 1 tube Meijer jumbo buttermilk refrigerated biscuits
Directions: Heat the juices in a large saucepan over medium heat until barely steaming. In a bowl, mix enough water into the flour to make a thick slurry. Slowly pour the slurry into the juices, stirring the pot constantly. Add water to desired gravy consistency. Add the vegetables and chicken, simmering until hot throughout. Prepare the biscuits as directed on the package. Serve the chicken mixture over the biscuits.
Meal 3: Pork Rigatoni $6.58
- 2 lb boneless pork loin
- 2 jars Meijer pasta sauce, any variety
- 1 box Meijer rigatoni pasta
Directions: Remove the fat from the pork loin and place in a slow cooker. Top with sauce, cover, and set to low for 6-8 hours. Remove the pork and shred. Return to the sauce. Prepare the pasta as directed on the package. Serve the meat sauce over the pasta. Top with parmesan cheese, if desired.
Meal 4: Asian Beef and Noodles $4.49
- 1 lb ground beef
- 2 pkgs ramen noodles, Oriental flavor
- 1 bag Meijer broccoli stir-fry blend
- ¼ t ground ginger (pantry)
- 2 ½ C water
Directions: Brown the ground beef and drain; add in one Oriental seasoning packet and stir in. Remove from pan and set aside. In the same pan, mix 2 ½ cups of water, noodles, vegetables, ginger, and the remaining packet of Oriental flavoring. Bring to simmer for 3-4 minutes, until veggies and noodles are tender. Return the beef to the pan and cook 1 minute more. Serve.
Meal 5: BBQ Spare Ribs with Corn on the Cob $8.18
- 2 lb spare ribs
- 1 bottle Sweet Baby Ray’s barbecue sauce, any variety
- 8 ears corn, shucked and silk removed
- Butter (pantry)
Directions: Place ribs in a slow cooker, cutting apart if necessary. Top with barbecue sauce, cover and set to low for 6-8 hours. Bring a large pot of water to a boil. Add corn and cook for 3 minutes. Remove to a platter. Serve the corn with butter.
Meal 6: Creamy Mushroom Chicken with Rice $6.27
- 2 lb split chicken breast, meat removed from the bone and cut into bite-sized pieces
- 1 can Campbell’s Cream of Mushroom soup
- 1 onion, chopped (pantry)
- 1 can Meijer evaporated milk
- 1 C water (pantry)
- 2 T butter (pantry)
- 1 8 oz pkg Baby Bella mushrooms, cleaned and sliced
- 2 C rice (pantry)
Directions: In a large saute pan, melt the butter. Add the soup, milk, water, mushrooms, and onion. Bring to a simmer for 2 minutes. Add the chicken and simmer another 5-10 minutes, stirring often, until the chicken is tender and done throughout. Place the rice and water in a saucepan. Cover and bring to a simmer for 20 minutes or until the rice is tender and the water is absorbed. Serve the chicken over the rice.
