Meijer Meal Plan 2/24: 6 Meals Under $37

It’s a new shopping week at Meijer! Here are 6 easy meals you can make under $37 with no coupons needed. Of course, if you already have many of these items or have coupons to use, your out of pocket cost will be even lower!

Meal 1: Dijon Thyme Roasted Chicken Breasts with Salad $4.20
- 1 lb boneless skinless chicken breasts, butterfly cut
- 2 T olive oil (pantry)
- ½ t ground or rubbed thyme (pantry)
- 1 T dijon mustard (pantry)
- ½ t garlic salt (pantry)
- Salt (pantry)
- Pepper (pantry)
- 1 T flour (pantry)
- 1 T lemon juice (pantry)
- 2 Romaine hearts, chopped (from 3 pk)
- ½ greenhouse cucumber, chopped
- Salad dressing of choice (pantry)
Directions: Place the chicken breast in a 9×13 inch baking dish. In a bowl, mix the oil, thyme, mustard, salts, and pepper. Pour over the chicken, cover, and bake in a 375°F oven for 1 hour. Remove from the pan and transfer the drippings to a small saucepan. Whisk in the flour and lemon juice and heat over medium heat until thickened. In a bowl, mix the romaine, cucumber, and dressing. Serve the chicken drizzled in the sauce.
Meal 2: Smoked Sausage Au Gratin $3.95
- 1 pkg Eckrich smoked sausage, cut into ½ inch pieces
- 2 twin pack Better Crocker Au Gratin potatoes, plus ingredients per package
Directions: In a casserole dish, mix the potatoes, seasonings, and liquid ingredients. Mix in the sausage, cover, and bake in a 375°F oven for 45 minutes or until the potatoes are tender. Serve with crusty bread, if desired.
Meal 3: Lemon Garlic Pork Chops with Cheddar Mashers $5.86
- 2 lb assorted boneless pork chops
- 2 T olive oil (pantry)
- 1 t garlic powder (pantry)
- 3 T lemon juice (pantry)
- 1 t salt (pantry)
- ½ t pepper (pantry)
- 3 T butter (pantry)
- 2 T lemon juice (pantry)
- 5 cloves garlic, peeled and minced (pantry)
- 2 lb red potatoes, scrubbed and diced
- Milk and butter for mashing (pantry)
- 1 8 oz pkg Meijer shredded sharp cheddar
Directions: The night before, in a plastic zippy bag, mix the olive oil, garlic powder, 3 T lemon juice, salt, and pepper. Add in the pork chops, seal, coat the chops with the mixture, and refrigerate overnight. About 1 hour before serving, place the potatoes in a large saucepan, cover with water, sprinkle with salt, and simmer until tender, about 40 minutes. In a large ovenproof saute pan, melt the butter until foaming. Add in the chops and brown well. Turn over, add the lemon juice and garlic to the pan, and brown the other side, spooning the juices over the chops. Preheat the oven to 375°F. Add the pan of browned chops to the oven and cook for about 15 minutes, until a thermometer in the thickest part reads 145°F. While the chops are baking, drain the potatoes and mash with the milk, butter, and cheese to desired consistency. You can make a gravy with the pork drippings if you like by adding 1 T flour and heating until thickened.
Meal 4: Homemade Slow Cooker Pasta Sauce $5.10
- 2 28 oz cans Meijer petite diced tomatoes
- 1 12 oz can Meijer tomato paste
- 2 T grated parmesan cheese (pantry)
- 3 cloves garlic, minced (pantry)
- 1 T dried oregano (pantry)
- ½ t dried basil (pantry)
- ½ t salt (pantry)
- 1 box Meijer pasta, any variety
- 1 loaf Meijer Italian bread
Directions: In a slow cooker, place the tomatoes (with juice), paste, cheese, and seasonings. Stir, cover, and set to low for 6-8 hours. Prepare the pasta as directed on the package. Serve the sauce on the pasta with the bread on the side.
Meal 5: Fried Chicken with Baked Mac & Cheese $9.48
- 1 8 or 10 pieces of Meijer fried chicken (in the deli)
- 1 pkg Cracker Barrel Oven Baked Mac & Cheese (plus ingredients per packaging)
Directions: Prepare the mac & cheese as directed on the package. Reheat the chicken by placing on a baking sheet in the oven for the last 10 minutes of the mac & cheese. Serve hot.
Seriously, if you guys haven’t tried buying dinner from the deli, do it! I do this all the time when I don’t feel like cooking! It’s super cheap and it saves me time!
Meal 6: Cheeseburgers with Tomato Gravy with Roasted Potatoes $7.75
- 1 ½ lb ground beef
- 1 egg (pantry)
- Salt (pantry)
- Pepper (pantry)
- 1 onion, sliced (pantry)
- 2 cans Hunt’s fire roasted tomatoes
- ½ C beef stock (pantry)
- 4 slices Meijer Swiss cheese
- 2 lb red potatoes, scrubbed and cut into wedges
- 3 T olive oil (pantry)
- Salt (pantry)
Directions: Place the potatoes on a baking sheet, drizzle with olive oil, and sprinkle with salt. Bake in a 425°F oven for 30-40 minutes, until tender and browned, stirring every 15 minutes. In a bowl, mix the ground beef, egg, salt, and pepper. Form into 4 patties. Place the patties in a hot saute pan over medium-high heat. Brown on both sides and remove to a plate. Add the onion and saute until clear. Add in the tomatoes and beef stock and bring to a simmer. Add the patties to the tomatoes, spooning the tomato mixture over the patties. Cook another 15 minutes, covered. Remove the cover, spoon the mixture over the top and cook another 5 minutes. Place a slice of cheese on each patty and serve on a bed of the sauce with the potatoes on the side.
