Meijer Meal Plan Week 12/30: 6 Meals under $46
Meal 1: Herbed Feta Chicken with Bruschetta Rice $7.02
- 2 lbs boneless/skinless chicken breasts
- 1 t salt (pantry)
- ½ t pepper (pantry)
- 1 t oregano (pantry)
- ½ t rosemary (pantry)
- 1 pkg Meijer crumbled feta cheese
- 1 can Meijer bruschetta diced tomatoes, undrained
- 2 C rice (pantry)
- 4 C water (pantry)
Directions: Place the chicken in a baking dish. In a small bowl, mix the salt, pepper, oregano, and rosemary. Sprinkle over the chicken, cover, and bake in a 400°F oven for 1 hour or until a thermometer inserted into the thickest part reaches 160°F. Remove from oven, uncover, and sprinkle with feta cheese. About 30 minutes before the chicken is done, place the rice, water, and tomatoes in a large saucepan; cover and bring to a simmer for 20 minutes, until the rice is tender and the liquid is absorbed. Serve the chicken over the rice, if desired.
Meal 2: Pork Loin with Sauerkraut and Mashed Potatoes $7.77
- 2 lb boneless pork loin
- 1 bag Meijer sauerkraut
- 2 ½ lbs round white potatoes, peeled and diced
- Milk and butter (pantry)
Directions: Place the sauerkraut, including juices, into a slow cooker. Place the loin on top, cover, and set to low for 6-8 hours. Place the potatoes in a large saucepan, cover with water, salt liberally, and bring to a boil until potatoes are tender when pierced with a fork. Drain and mash the potatoes with milk and butter to desired consistency.
Meal 3: Easy Pasta Night $3.67
- ½ lb ground beef
- 3 cloves garlic, minced (pantry)
- 2 jars Meijer pasta sauce
- 1 t oregano (pantry)
- ½ t basil (pantry)
- ½ t marjoram (pantry)
- 1 box Meijer pasta, any variety
Directions: Brown the ground beef and garlic until no pink remains; drain. Place the sauces in a slow cooker, add the beef mixture and seasonings, cover and set to low for 6-8 hours. Prepare the pasta as directed on the package. Serve with the sauce and parmesan, if desired.
Meal 4: Slow Cooker Ribs and Beans $7.37
- 2 lb pork country ribs
- 1 48 oz jar Randall great northern beans
- 1 15 oz can Meijer tomato sauce
- 1 packet Lipton dry onion soup mix
- ⅓ C brown sugar (pantry)
- 1 t dry mustard (pantry)
Directions: Place the beans in a slow cooker. Mix in the tomato sauce, soup mix, brown sugar, and mustard. Place the ribs on top, cover, and set to low for 6-8 hours.
Meal 5: Bottom Round Roast 2-Ways $13.84
- 3 lb bottom round roast
- Salt (pantry)
- Pepper (pantry)
- 4 russet potatoes, scrubbed and pierced
- Butter (pantry)
- 1 bag Meijer frozen vegetables, any variety
Directions: Place the roast in a slow cooker, fat side up. Season with salt and pepper, cover, and set to low for 6-8 hours. About 1 hour before serving, place the potatoes in a 400°F oven and bake until tender when pierced with a fork. Steam the veggies to desired doneness. Reserve half of the roast for the next meal.
Meal 6: Shredded Beef Tatchos $5.66
- ½ beef roast, shredded
- 2 packets Meijer taco seasoning
- 1 pkg Meijer frozen tater tots
- 1 14 oz can Meijer diced tomatoes with chilies, drained
- 1 pkg Kraft shredded Colby Jack cheese
Directions: Place the beef in a saucepan and season with taco seasoning, per the directions on the packet, simmering until hot throughout. Place the tots on a baking sheet and prepare per the package directions to desired crispiness. Top the tots with seasoned meat, drained tomatoes, and cheese. Return to the oven for 5 minutes, until the cheese is melted and the tomatoes are hot.
