The Recipes for Thanksgiving

The Turkey and Stuffing
In a bowl, place the stuffing mix, onion, and 1 rib of chopped celery. Stir to mix and set aside. Prepare the turkey by removing the neck and gizzards and rinsing the inside. Salt liberally and place in a roasting pan. Set aside. Place the neck and gizzards in a saucepan. Cover with water and bring to a boil for 30 minutes. Remove the neck and gizzards and allow the broth to cool until it is warm but not hot. Pour slowly over the stuffing, mixing until all the pieces are moist but not soggy. Stuff the cavity and neck area of the turkey. Drizzle with melted butter, cover tightly with foil or lid, and place in 350°F oven for 3.5 to 4 hours, until temperature in the thickest part of the thigh measures 180°F.

Mashed Potatoes and Gravy
Peel and dice the Russet potatoes. Place in a stockpot of cold water and salt well. Bring to a boil and cook until potatoes are tender about 20-30 minutes. Drain the potatoes and mash slightly with a potato masher or fork. Add 4 T butter and ¼ c milk. Whip with a mixer until smooth. For the gravy, place ¾ C flour in a small bowl. Add enough water while stirring to make a thick slurry (not a paste, not a thin liquid). Transfer the turkey drippings to a large saucepan and heat over medium heat. Add the slurry by drizzling, stirring the drippings to incorporate. Continue stirring, bringing the mixture to a boil slowly. Once thickened, serve.

Candied Sweet Potatoes
Peel the sweet potatoes and slice them into rounds or cubes uniformly. Melt 1 stick of butter in a saute pan over medium heat and add the sweet potatoes. Sprinkle with brown sugar, cinnamon and nutmeg. Cover and simmer for 35-40 minutes, until potatoes are tender. Serve hot.

Waldorf Salad
Chop and toast the walnuts in a small saute pan. Allow to cool. In a small bowl, mix the yogurt, mayonnaise, and grated zest of ½ lemon. Season with ground pepper. Chop the apples and toss with the juice of ½ lemon. Add 2 ribs of chopped celery, raisins, and chopped Boston lettuce. Drizzle with dressing and toss. Serve chilled.

Sweet Peas
Prepare according to package directions.

Crescent Rolls
Prepare according to package directions.

How awesome is that? An entire Thanksgiving feast for 4-8 people for only $23.44! What a beautiful way to not only save but spend a day giving thanks for everything you’ve accomplished over the past year with all of your loved ones!

Gluten-Free Readers:

If you are gluten-free but miss having your turkey stuffed for Thanksgiving, you must check out this amazing wild rice and grape stuffing.  I tried it years ago, and I love it.  It’s perfect in any bird or on the side of a casserole dish.  You can get all this flavor in a simple dish for $7.85.

6 pieces bacon $2.25

1 T olive oil (pantry)

1 onion, diced (pantry)

1 stalk celery, diced (pantry)

5 C cooked wild rice $2

salt (pantry)

black pepper (pantry)

½ C dry red wine $.75

1 ¼ C green grapes, cut in half or quarters $1

1 C almonds, roughly chopped, $1.85

Directions:

Cook the bacon in a saute pan until crisp; remove from the pan.  Add the onion and celery to the bacon drippings and saute until the onions are clear.  Sprinkle with salt and pepper; add the wine and reduce by half, about 45 seconds.  In a large bowl, crumble the bacon.  Add the remaining ingredients, including the sauteed onions and celery.  Mix well.  Stuff your bird and cook as usual, or place in a greased casserole pan and bake in a 350°F oven for 1 hour.
