Meal Planning Ideas for Meijer

It’s a new week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. 

For this week the Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price.

Meal 1:  Garlicky Brown Sugar Pork Chops with Rice  $1.98

  • 2 lbs (4 thick) pork loin assorted pork chops
  • 3 cloves garlic, peeled and minced (pantry)
  • ½ C light brown sugar (pantry)
  • ½ t salt (pantry)
  • ½ t pepper (pantry)
  • 2 C rice (pantry)
  • 4 C water (pantry)
  • Butter (pantry)

Directions:  In a medium-sized bowl, mix the garlic, sugar, salt, and pepper.  Toss the chops in to coat. Place on a rimmed baking sheet and top with remaining seasoning mixture.  Bake in a 375°F oven for 35-40 minutes, until no pink remains near the bone. When the chops are placed in the oven, place the rice and water in a large saucepan.  Cover and bring to a simmer for 15-20 minutes, until the water is absorbed and the rice is tender.

Meal 2:  Hungarian-Style Goulash  $7.95

  • 1 ½ lb ground beef
  • 1 large onion, diced (pantry)
  • 2 carrots, diced (pantry)
  • 1 green pepper, diced (pantry)
  • ½ t salt (pantry)
  • ½ t black pepper (pantry)
  • 1 C Meijer beef broth
  • 2 T flour (pantry)
  • 2 T paprika (pantry)
  • 1 T tomato paste
  • 2 cloves garlic, minced (pantry)
  • 1 pkg Meijer wide egg noodles

Directions:  In a saute pan, brown the ground beef with the onion, carrots, and pepper until no pink remains in the meat.  Drain and place in a slow cooker. Add the broth to the pan and deglaze the bits off the pan. Whisk in the flour, paprika, tomato paste, and garlic.  Add the mixture to the slow cooker. Cover and set to low for 6-8 hours. About 30 minutes before serving, bring a large pot of water to a boil. Cook the noodles as directed on the package.  Stir into the beef mixture and serve.

Meal 3:  Mexican Chicken Pasta  $4.35

  • 1 ½ lb split chicken breasts, bones and skin removed, cut into ½ inch pieces
  • 1 T olive oil (pantry)
  • 1 large onion, diced (pantry)
  • 1 red pepper, diced (pantry)
  • 1 green pepper, diced (pantry)
  • 1 t oregano (pantry)
  • 1 T chili powder (pantry)
  • ½ t cumin (pantry)
  • ½ C chicken broth
  • Salt and pepper (pantry)
  • 1 can Hunt’s fire roasted tomatoes
  • ¾ C half and half (pantry)
  • 1 C shredded pepper jack
  • 1 box Meijer spaghetti

Directions:  In a large skillet, heat the oil over medium-high heat.  Add the chicken and cook until no pink remains. At the same time, prepare the pasta as directed on the package.  Drain and set aside. Add the peppers and onion to the chicken, sauteing until tender. Sprinkle in the spices and stir well.  Add the tomatoes, half n half, and broth. Stir well. Add the pasta to the pan and stir in the cheese.

Meal 4:  Baked Ham with Butternut Squash and Broccoli  $8.40

  • 7 lb Cook’s shank ham
  • 2 lb butternut squash, seeds removed and flesh cubed
  • 2 T olive oil (pantry)
  • Salt and pepper (pantry)
  • 1 lb broccoli

Directions:  Unwrap the ham and place it in a large slow cooker.  Cover and set to low for 6-8 hours. About 1 hour before serving, place the squash and oil on a baking sheet.  Toss to coat. Season with salt and pepper and roast in a 425°F oven for 40-50 minutes, until tender and crisp.  Steam the broccoli to desired doneness. Reserve leftover ham for the next meal.

Meal 5:  Ham and Pierogi Bake  $6.07

  • 3 C leftover ham, diced
  • 2 boxes Mrs. T’s pierogies
  • 1 jar Meijer alfredo sauce

Directions:  In a large casserole dish, mix the ingredients.  Cover and bake in a 400°F oven for 45 minutes or until the pierogies are tender and the mixture is bubbly.  Serve with crusty bread, if desired.

Meal 6:  Hashbrown Topped Ground Beef Bake  $10.39

  • 1 ½ lbs ground beef
  • Salt and pepper (pantry)
  • 1 onion, diced (pantry)
  • 3 carrots, diced (pantry)
  • 1 8 oz pkg mushrooms, sliced
  • 2 cloves garlic, minced (pantry)
  • 2 T flour (pantry)
  • 3 C beef broth
  • 1 bag Meijer frozen hashbrowns

Directions:  In an oven-safe Dutch oven, brown the ground beef, onion, carrots, mushrooms, and garlic over medium heat until no pink remains in the beef.  Season with salt and pepper. Sprinkle in the flour, stirring well. Add in the beef broth and cook until thickened, about 5 minutes. Sprinkle the hashbrowns over the top of the mixture (no stirring) and place in a 400°F oven for 25-30 minutes, until the hashbrowns are crispy and tender.
