This is the week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers and it’s all about Gluten Free Meals. You can find more Meijer Meal Planning ideas HERE.
For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry! These are pretty healthy meals, at a low Meijer price that will be pretty quick and easy to make any night of the week. You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)
- This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
- All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates 10/26-11/1 )
Wow! There’s a lot of great choices this week at Meijer for the Gluten Free! From delicious Chili Roasted Cod to Country Style Jerk Ribs, it’s a great week to be shopping at Meijer!
Day 1: Chili Roasted Cod with Asparagus and Rice $6.24
1 lb Meijer Cod
1 T olive oil (pantry)
1 t chili powder (pantry)
¾ t oregano (pantry)
¼ t salt (pantry)
2 T butter (pantry)
½ t ground cumin (pantry)
juice of 1 fresh lime (pantry)
1 lb asparagus, rinsed
2 T Italian salad dressing (pantry)
2 C rice (pantry)
4 C water (pantry)
Directions: Place rice and water in a large saucepan. Cover and bring to a simmer for 20 minutes, until all the water is absorbed and rice is tender. Meanwhile, heat oven to 350°F. Rub a rimmed baking sheet with the olive oil. Place the cod on the baking tray and sprinkle with chili powder, oregano, and salt. Roast in the oven for 7-10 minutes, until the cod is opaque and flakes easily with a fork. While the cod is roasting, place the butter in a small saucepan and heat until butter starts to brown. Add the cumin and lime juice. Drizzle over cooked cod. As the cod is roasting, place the asparagus in a saute pan. Add ½ cup water and steam over medium high heat until crisp-tender. Remove to a serving platter and drizzle with dressing. Serve all together, hot.
Day 2: Grilled Brined Chicken with Salad $8.24
½ pkg Tyson frozen chicken breasts
¼ C olive oil (pantry)
¼ C apple cider vinegar (pantry)
2 T dried oregano (pantry)
1 T minced garlic (pantry)
2 T orange juice (pantry)
1 bag Dole Salad Blends
¼ pkg Wild Wonders Tomatoes
1 avocado, seed removed and flesh cubed
salad dressing of choice (pantry)
Directions: Place the chicken, olive oil, vinegar, oregano, garlic, and juice in a large plastic zippy bag. Refrigerate for 24 hours. Place in baking dish and cover tightly with aluminum foil. Bake in 350°F oven for 1.5 hours, until chicken is done throughout. Make a salad out of the remaining ingredients.
Day 3: Captain Morgan’s Pulled Pork n Tots $9.49
1 pkg Captain Morgan’s Pulled Pork
1 pkg Ore-Ida tater tots
1 pkg Meijer shredded cheddar cheese
Directions: Heat the pulled pork in a saucepan until simmering and hot throughout. Cook the tater tots according to package directions. To serve, place tots on plate. Cover with pulled pork and sprinkle with cheese. Serve hot.
Day 4: Caribbean Jerk Country Style Ribs with Stewed Tomatoes and Green Beans $6.92
2 lbs country style ribs
Caribbean Jerk seasoning (pantry)
1 can Hunt’s Whole Tomatoes
1 can Freshlike Green Beans
½ t minced garlic (pantry)
1 t oregano (pantry)
Directions: Generously rub the country style ribs with seasoning. Allow to sit 1 hour. Bake in 325°F oven, covered in foil, for 2 hours. Simmer the remaining ingredients in a saucepan for 15 minutes. Serve hot.
Day 5: Chicken Chow Mein with Rice $2.79
La Choy Chicken Chow Mein (caution: does contain MSG)
2 C rice (pantry)
Soy sauce (pantry)
Directions: Prepare the chow mein as directed on the package. Place the rice and 4 cups water in a large saucepan. Cover and bring to a simmer for 20 minutes or until the water is absorbed and the rice is tender. Serve the chow mein over the rice with soy sauce, if desired.
Day 6: Coca Cola Chicken with Baked Potatoes, Salad $8.24
½ pkg Tyson frozen chicken breasts
½ C cola (pantry)
2 T brown sugar (pantry)
¼ C ketchup (pantry)
4 baking potatoes, scrubbed and poked
1 bag Dole Salad Blend
¼ pkg Wild Wonders Tomatoes
Salad dressing of choice
Directions: Place the chicken in a baking dish. Mis the coloa, brown sugar, and ketchup. Pour over the chicken and cover with foil. Bake in a 350°F oven for 1.5 hours, until chicken is cooked throughout. Prepare a salad out of the remaining ingredients. Serve.
Day 7: Simple Italian Stew $7.57
1.5 lbs ground beef
3 cans kidney beans
2 onions, chopped (pantry)
4 cloves garlic, minced (pantry)
Directions: Brown the ground beef, onions, and garlic in a stock pot. Add in the kidney beans, undrained, and add enough water to cover the mixture generously. Simmer, replenishing water if needed, for 2 hours. Serve hot with salt and pepper.
These seven tasty meals come in at a mere $49.49 for a family of four. What a great way to keep to a gluten free diet and eat tasty?
