Meijer Meal Planning Week 1/24 : 6 Meals Under $38

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry! You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)
- This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
- All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )
Meal 1: Simmered Country Ribs with Red Beans and Rice $5.28
- 2 lbs country style pork ribs
- ½ bottle V8, original flavor
- 3 yellow onions, peeled and chopped (pantry)
- 3 cloves garlic, peeled and minced
- ½ t cumin, ground (pantry)
- ¼ t cayenne pepper, ground (pantry)
- salt and pepper to taste (pantry)
- 1 box Zatarain’s red beans and rice (plus ingredients per directions)
Directions: Place the ribs, V8, onions, garlic and seasonings in a slow cooker. Cover and set to low for 6-8 hours. Prepare the rice as directed on the package.
Meal 2: Lemony Meatball Spinach Soup $6.16
- ½ bag Johnsonville meatballs
- 1 box Meijer chicken broth
- 1 14.5 oz can cannellini beans
- 2 cloves garlic, minced (pantry)
- 1 T lemon juice (pantry)
- ½ t salt (pantry)
- ¼ t pepper (pantry)
- 2 handfuls NewStar Cooking with Spinach + Baby Kale
Directions: Place the meatballs, broth, beans, and garlic in a stock pot. Simmer 20-30 minutes, until meatballs are tender. Add the lemon juice, salt, pepper, and greens; simmer an additional 5 minutes. Serve hot with crusty bread, if desired.
Meal 3: Citrus Balsamic Chicken Thighs with Buttered Noodles and Spinach $4.13
- 2 lbs chicken thighs
- 2 T olive oil (pantry)
- 1 t dried rosemary (pantry)
- ¼ C balsamic vinegar (pantry)
- ¼ C orange marmalade (pantry)
- 1 pkg Meijer wide egg noodles
- 3 handfuls NewStar Cooking with Spinach + Baby Kale
- 2 T butter (pantry)
Directions: Cook the noodles per the package directions. Place the olive oil in a saute pan and heat over medium high heat. Add the chicken and rosemary, and cook until golden brown on both sides and done throughout, about 8-10 minutes per side. Remove to a plate. Add the vinegar and marmalade, stirring to deglaze the pan. Add the chicken back in, turn to coat, and remove. Add the spinach and saute until wilted then add the butter and noodles. Toss to coat and serve with the chicken.
Meal 4: Turkey Amigo Pie $5.55
- 1 lb ground turkey
- 1 yellow onion, chopped (pantry)
- 1 can Red Gold diced tomatoes, drained
- 1 T chili powder (pantry)
- ¾ t salt (pantry)
- ¼ t pepper (pantry)
- ¾ C cornmeal (pantry)
- ¼ C flour (pantry)
- 1 C hot water
- 2 T melted butter
- ½ t baking powder
- 1 ½ C shredded cheddar
- ½ t salt
Directions: In a saute pan, brown the turkey and onion, until no pink remains. Add the tomatoes and seasonings. Cook on low until the crust is ready. For the crust: combine the cornmeal, flour, ½ t salt, and baking powder. Add hot water and butter and mix until smooth. Add in 1 cup of the cheese and stir to incorporate. Pour into a greased 9×9 baking dish. Spoon meat mixture into the center of the crust and press down gently with a spoon. Top with the remaining cheese. Bake in a 400°F oven for 25 minutes, until crust is golden brown.
Meal 5: Brat and Potato Soup $6.09
- 1 pkg Meijer brats, casing removed
- 2 potatoes, scrubbed and diced (pantry)
- 1 yellow onion, chopped
- 2 C water
- 1 small head cabbage, chopped
- 3 C milk (pantry)
- 3 T flour
- 1 pkg Meijer shredded Swiss cheese
Directions: Brown the brats and onion in a saute pan until no pink remains in the meat; drain the fat. Place the meat mixture, potatoes, and water in a stockpot. Heat to boiling. Reduce heat to a simmer for 20 minutes. Add the cabbage and simmer an additional 20 minutes. Add 2 ½ C milk slowly. In a small bowl, mix the remaining milk and flour, making sure no lumps remain. Slowly stir it into the soup and allowing the mixture to thicken. Serve with a sprinkling of cheese.
Meal 6: Stuffed Pepper Casserole $10.05
- 1 lb ground beef
- 1 small yellow onion, diced (pantry)
- 3 cloves garlic, minced (pantry)
- 1 pkg Meijer frozen diced green pepper
- salt
- pepper
- 1 14.5 oz can diced tomatoes
- 1 8 oz can tomato sauce
- 2 C Meijer vegetable stock
- 1 t Italian seasoning (pantry)
- 1 C long grain white rice (pantry)
- 1 pkg Meijer shredded cheddar cheese
Directions: In a saute pan, brown the ground beef with the onions and garlic, until no pink remains in the meat. Add the green pepper, salt, and pepper. Saute until the peppers are tender. Drain any extra fat. Add the tomatoes, tomato sauce, stock, and Italian seasoning. Simmer 5 minutes. Add the rice; cover and simmer about 25 minutes, until the rice is tender. Serve with the cheese.
