This is the week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. You can find more Meijer Meal Planning ideas HERE
For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry! You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)
- This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
- All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price.
Meijer has the perfect ingredients on sale this week for wonderful comfort foods that are perfect as the weather turns colder and we get closer to Christmas. There are busy times ahead with family, so these recipes are easy and delicious, bound to bring family together.
Meal 1: Slow Cooker Chicken and Dumplings $8.47
- 2 large chicken breasts, cut into bite sized pieces
- 1 onion, diced (pantry)
- 2 cans Cream of Chicken or Cream of Mushroom soup
- 1 pkg Meijer frozen peas & carrots
- 2 T butter, cut into pieces (pantry)
- 2 10 oz pkgs Pillsbury refrigerated buttermilk biscuit dough
Directions: Place the chicken, onion, soup, peas & carrots, and butter into a slow cooker. Cover and set to low for 6 hours. Cut the biscuits into 4 pieces each and place on top of the chicken. Cover and allow to cook for another 30 minutes, until the center of the biscuit pieces are cooked through.
Meal 2: Ham, Rice, and Vegetables $8.19
- 6 lb Cook’s Shank portion ham
- 1 box Rice a Roni, any variety
- 1 pkg Meijer frozen vegetables, any variety
Directions: Place the ham in a large baking dish. Tightly cover with foil and place in a 350°F oven for 3-4 hours, until the ham falls apart. Make the rice and vegetables according to the package directions. Serve hot and save some ham for the following two meals.
Meal 3: Ham & Beans $4.54
- 2 cups cubed leftover ham
- 1 jar Randall deluxe mixed beans, including juice
- 1 pkg Meijer mixed frozen vegetables
- 1 onion, diced (pantry)
- salt & pepper, to taste (pantry)
Directions: Place all the ingredients in a large slow cooker. Cover and set to low for 6-8 hours. Serve hot with crusty bread, if desired.
Meal 4: Ham & Scalloped Potatoes $1.35
- 2.5 lbs white potatoes, scrubbed and sliced thin
- 2 cups cubed leftover ham
- 2 cups whole milk (pantry)
- 2 cloves garlic (pantry)
- 2 T butter (pantry)
- salt & pepper, to taste (pantry)
Directions: Rub the garlic and butter around the inside of a 2 quart casserole dish. Layer the potatoes and meat in the dish. Top with the milk, garlic, and butter. Salt and pepper to taste. Cover with foil and bake in a 350°F oven for 30-40 minutes, until the potatoes are tender when pierced with a fork. Serve hot.
Meal 5: Baked Salmon with Salad $8.40
- 1 lb salmon filet
- 2 romaine hearts, rinsed and chopped
- ½ lb tomatoes on the vine, diced
- 1 cucumber, diced
- 1 green bell pepper, diced
- salad dressing of choice (pantry)
Directions: Rinse the salmon and place on a baking sheet. Sprinkle with salt and pepper. Bake in a 425°F oven for 9-12 minutes, until the fish flakes easily with a fork. Allow to cool until the fish is warm. Place the vegetables in bowls, top with the salmon and serve with salad dressing.
Meal 6: Salisbury Steak, Macaroni & Cheese, and Vegetables $13.17
- 1.5 lbs ground beef
- 1 egg (pantry)
- ½ C bread crumbs (pantry)
- sprinkle of salt (pantry)
- sprinkle of pepper (pantry)
- 1 can Campbell’s French Onion Soup
- ⅓ C ketchup (pantry)
- ½ t dry mustard (pantry)
- 1 T Worcestershire sauce (pantry)
- 2 pkgs Kraft Shredded 3 cheese blend with a touch of Philadelphia Cream cheese
- 1 box Meijer green box elbow macaroni
- 1 C milk (pantry)
- 3 T butter (pantry)
- 1 bag Meijer frozen vegetables, any variety
Directions: In a bowl, mix the ground beef, egg, bread crumbs, salt and pepper, and ⅓ cup of the canned soup. Form into 4 flat oval patties. Place in a large saute pan over medium heat and brown both sides well. Mix the remaining soup, ketchup, mustard, and Worcestershire sauce in a bowl. Pour over the meat and cover, allowing to simmer for 20-30 minutes, until the meat is done throughout. For the macaroni and cheese (can be done in advance), boil the macaroni until nearly done; drain well. In a buttered 2 quart casserole dish, layer the macaroni and cheese, topping with the cheese. Cut the butter into thin slices and dot the top of the casserole. Pour the milk over the top and cover. Bake in a 350°F oven for 30-40 minutes, until cheese is melted and the mixture is bubbly. Prepare the vegetables as directed on the package.
For $44.12, you can feed your family of 4 a great feast every night!
