Meijer Meal Planning Week 2/17: 6 Meals $40

It’s a new week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. 

For this week the Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price.

Meal 1:  Sloppy Joe Bake  $6.87

  • 1 lb ground chuck
  • 1 can Manwich, any variety
  • 1 bag Meijer frozen shredded hash browns
  • ½ pkg Meijer shredded cheddar

Directions:  Brown the ground beef and drain.  Add the Manwich and simmer for 10 minutes.  Spray a 9×13 pan with nonstick spray. Press the hash browns into the pan and bake in a 425°F oven for 15 minutes.  Remove from the oven and spread the meat mixture. Top with the cheese and return to the oven for 20 minutes.

Meal 2:  Classic Pot Roast Two Ways  $13.89

  • 3 lb chuck roast
  • 2 lb Russet potatoes, scrubbed and cubed
  • 1 lb baby carrots
  • 2 onions, peeled and chopped (pantry)
  • Salt and pepper (pantry)

Directions:  Place the chuck roast in a slow cooker.  Season well with the salt and pepper. Add in the vegetables, cover and set to low for 6-8 hours.  Reserve half of the meat for the next meal, as well as the juices.

Meal 3:  Pot Roast Hash  $0.90

  • Leftover pot roast, shredded (pantry)
  • ½ bag Meijer frozen potatoes O’Brien
  • 1 onion, diced (pantry)
  • 3 T Olive oil (pantry)
  • Beef juice (pantry)
  • ¼ C flour (pantry)
  • 2 T ketchup (pantry)
  • ½ t ground mustard (pantry)
  • 8 eggs (pantry)
  • 2 T butter (pantry)

Directions:  In a saute pan, heat the oil over medium-high heat.  Brown the potatoes until crisp and add in the meat and onion.  Cook until the onion is clear. In a bowl, whisk the beef juice, flour, ketchup, and mustard.  Pour over the meat mixture and cook until thickened, about 5 minutes. Cook the eggs in the butter over medium heat to desired doneness.  Serve over the hash.

Meal 4:  Chicken Saltimbocca with Salad  $8.39

  • 2 lb split chicken breasts, skin and bones removed, sliced in half lengthwise (butterfly style)
  • Salt and pepper (pantry)
  • 8 sage leaves
  • 4 slices Daniele Del Duca Prosciutto
  • 3 T olive oil (pantry)
  • ½ C water (pantry)
  • 1 lemon, juiced (pantry)
  • 1 t cornstarch (pantry)
  • 2 T butter (pantry)
  • 1 pkg Dole spring mix (10 oz)
  • ¼ C olive oil (pantry)
  • 1 lemon, juiced (pantry)
  • 2 T red wine vinegar (pantry)
  • ½ t oregano (pantry)

Directions:  Place 2 sage leaves on each chicken breast, season with salt and pepper, and wrap in the prosciutto.  Heat the 3 T olive oil in a saute pan over medium-high heat. Add the chicken and cook for 5 minutes. Turn over and cook another 5 minutes or until the chicken is done throughout.  Remove the chicken from the pan. In a bowl, mix the juice of 1 lemon, cornstarch, and water. Melt the butter in the pan with the chicken drippings. Add in the lemon mixture and bring to a simmer.  When thick, pour over the chicken. Place the spring mix on a bowl. Add the remaining ingredients and toss. Serve with the chicken.

Meal 5:  Cassoulet $4.17

  • 1 pkg Johnsonville Brats, sliced ½ inch thick
  • 2 cans Meijer dark red kidney beans, drained
  • 1 can Meijer petite diced tomatoes
  • 1 onion, diced (pantry)
  • 2 carrots, diced (pantry)
  • 2 ribs celery, diced (pantry)

Directions:  Place the brats, onion, carrots, and celery in a Dutch oven over medium heat.  Saute until the onions are clear and the brats are browned. Add in the beans and tomatoes and bring to a simmer.  Simmer 20 minutes and serve with crusty bread, if desired.

Meal 6:  Chicken Tenders with Fries  $5.78

  • 1 bag Meijer crispy chicken strips
  • Barbecue or ranch dressing (pantry)
  • 1 bag Meijer frozen French fries

Directions:  Prepare the chicken and fries according to the package directions.  Serve with the sauces.

This week, 6 delicious meals cost only $40!
