Meijer Meal Planning Week 2/21: 6 Meals Under $43

This is the week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. You can find more Meijer Meal Planning ideas HERE
For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry! You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)
- This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
- All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price.
It’s that time again! Check out the great deals at Meijer and these meals that you can create at great prices!
Meal 1: Arroz con Pollo $8.70
- 2 lbs boneless skinless chicken breasts
- 2 t salt (pantry)
- 1 t garlic powder (pantry)
- ½ t ground cumin (pantry)
- ¼ t black pepper (pantry)
- 3 T olive or coconut oil (pantry)
- 1 onion, peeled and diced (pantry)
- ½ bag Meijer frozen diced green bell pepper
- 1 red bell pepper diced
- 2 cloves garlic, minced (pantry)
- 1 ½ C long grain rice
- 1 ½ C Swanson chicken stock
- 1 small can Meijer naturals tomato sauce
Directions: Place the dry seasonings in a large plastic zippy bag. Rinse the chicken and place in the bag, shaking to coat. Heat the oil in a large Dutch oven and place the chicken in the pot. Brown on all both sides and remove to a plate. Add the peppers, onion, and garlic; stir and saute until onions start to turn clear. Add the rice and saute until it just starts to brown. Add the stock, tomato sauce, and chicken. Bring to a simmer, cover, and let cook for 20-25 minutes, until the rice is tender.
Meal 2: Pierogie Casserole $6.48
- 1 box Mrs. T’s Pierogies, cheese flavor
- 1 jar Prego pasta sauce, any variety
- ½ lb Meijer loose Italian Sausage
Directions: Brown the sausage until no pink remains and drain. In a 2 quart casserole dish, layer sauce, pierogies, and sausage, starting and ending with sauce. Sprinkle with parmesan cheese if desired. Cover and bake in a 350°F oven for an hour, until the sauce is bubbly and the pierogies are hot throughout. Serve with crusty bread, if desired.
Meal 3: Stuffed Clams, Rice, and Vegetables $6.03
- 1 pkg Matlaw’s frozen stuffed clams
- 1 pkg Uncle Ben’s Rice, any variety
- 1 pkg Meijer frozen vegetables, any variety
Directions: Prepare the clams, rice, and vegetables as directed on the packages.
Meal 4: Burgers and Tots $7.46
- 1 ½ lbs ground chuck
- ½ t salt (pantry)
- 1 clove garlic, minced (pantry)
- ½ pkg Aunt Millie’s hamburger buns
- 1 pkg Ore Ida tater tots
Directions: Mix the ground chuck with the salt and garlic; form into patties and grill or broil to desired doneness. Prepare the tater tots according to the package directions. Serve the burgers in the buns with your favorite condiments.
Meal 5: Baked Chicken with Stuffing and Asparagus $6.03
- 1 lb boneless skinless chicken breast
- 1 box Stove Top stuffing
- 1 lb asparagus, rinsed and cut ends snapped
- 2 T butter
Directions: Mix the stuffing per the microwave directions in a casserole dish but do not microwave. Top with the chicken and cover. Bake in a 350°F oven for 1 hour, until no pink remains in the chicken. In a saute pan, heat the butter over medium heat; once melted, add in the asparagus and saute until slightly browned.
Meal 6: Cheesy Nachos $8.33
- 1 lb ground chuck
- 1 pkg McCormick Taco seasoning
- 1 jar Pace salsa
- 1 bag Meijer tortilla chips
- 1 pkg Kraft shredded cheddar
Directions: Brown the ground chuck and drain; add the taco seasoning per the package directions. Layer chips, meat, salsa, and cheddar on a baking sheet and heat in a 400°F oven until cheese melts.
