Meijer Meal Planning Week 2/7: 6 Meals Under $40

This is the week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. You can find more (including last week’s ideas here ->) Meijer Meal Planning ideas HERE
For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry! You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)
- This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
- All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price.
Shopping at Meijer will yield great savings this week with a cart full of meals that are sure to please your family!
Meal 1: Parmesan Tilapia with Sautéed Cabbage and Rolls. $7.43
- 1 lb tilapia
- ¾ C Parmesan (pantry)
- 2 t paprika (pantry)
- 2 t parsley (pantry)
- Salt & pepper (pantry)
- Olive oil (pantry)
- 1 head Napa cabbage, chopped
- 2 cloves garlic, minced (pantry)
- 4 T olive oil (pantry)
- 1 tube Pillsbury Grands biscuits
Directions: Heat oven to 400°F. Grease a rimmed baking sheet and set aside. Mix the parmesan, paprika, salt, pepper, and parsley in a shallow bowl. Coat the fish with olive oil then roll in the parmesan mixture. Places on the baking sheet and bake 10-12 minutes, until fish flakes easily with a fork. While the fish is baking, prepare the rolls per package directions. For the cabbage, heat 4 T olive oil and garlic in a saute pan. Add the cabbage and saute over medium heat until wilted.
Meal 2: Tuna Noodle Casserole $5.49
- 1 bag Meijer wide egg noodles, cooked al dente and drained
- 2 cans Starkist light tuna, drained and rinsed
- 1 can Campbell’s Cream of Mushroom soup
- ⅔ C milk (pantry)
- 1 bag Meijer frozen peas and carrots
Directions: In a lightly greased 9 13 pan, place all ingredients and mix well. Bake on a 350°F oven for 45 minutes, covered, until the mixture is bubbly.
Meal 3: Pasta with Meat Sauce $6.14
- 1 lb ground beef
- 3 cloves garlic, minced (pantry)
- 1 jar Classico pasta sauce, any variety
- 1 lb Barilla pasta sauce, any variety
- Parmesan, if desired (pantry)
Directions: Brown the ground beef and garlic in a saute pan. Drain any fat. Add the sauce and simmer. Prepare the pasta as directed on the package. Serve with Parmesan.
Meal 4: Sausage with Potatoes and Vegetables $3.75
- 1 pkg John Morrell smoked sausage
- 2.5 lbs red potatoes, scrubbed and cubed
- 2 T butter (pantry)
- 1 bag Meijer frozen vegetables, any variety
Directions: Place the potatoes in a saucepan, cover with water, and bring to a boil Boil for 20-25 minutes, until tender when pierced with a fork. Drain and add butter. Toss to coat. While the potatoes are boiling, place the sausage on a baking sheet and bake in a 400°F oven for 15-20 minutes. Prepare the vegetables as directed on the package.
Meal 5: Pork Chops with Mashers and Vegetables $8.55
- 1 lb center cut pork loin chops
- 1 pkg mini bella mushrooms, cleaned and chopped
- 1 can Campbell’s Cream of Celery soup
- 2.5 lb red potatoes, scrubbed and cubed
- milk and butter (pantry)
- 1 pkg Meijer frozen vegetables
Directions: In a small casserole dish, place the pork chops; top with mushrooms and soup, cover, and bake in a 350°F oven for 1 hour or until no pink remains in the pork chops. Place the potatoes in a saucepan, cover with water, and bring to a boil for 20-35 minutes, until the potatoes are tender when pierced with a fork. Mash with the butter and milk to the consistency desired. Prepare the vegetables as directed on the package.
Meal 6: Beef Stew $7.73
- 1 lb top round steak, fat removed and cut into bite sized pieces
- 1 bag Meijer mixed stew vegetables
- 3 carrots, scrubbed and chopped (pantry)
- 1 onion, peeled and chopped (pantry)
- 1 box Swanson beef stock
- salt and pepper to taste (pantry)
- 2 bay leaves (pantry)
- ½ C flour (pantry)
- water (pantry)
Directions: Place the steak, vegetables, beef stock, and seasonings in a slow cooker. Cover and set to low for 6-8 hours. Just before serving, mix the flour with enough water to make a thick slurry. Slowly pour into the stew while stirring. Raise temperature to high and stir until thickened. Serve with crusty bread, if desired.
