Meijer Meal Planning Week 3/19: 6 Meals $38 Bucks

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
  • All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )

The sales are pretty good this week and that means great meals for your family for less!  Check out these six homemade meals that will keep your family coming back for more!

Meal 1:  Sunday Chicken with Broccoli and Smashers  $8.43

  • 4 lb whole chicken, rinsed
  • 1 24 oz pkg fingerling potatoes
  • ½ stick butter (pantry)
  • ¼ C grated parmesan (pantry)
  • 1 lb broccoli, cut into florets

Directions:  Place the chicken in a roasting pan.  Sprinkle with salt and pepper, cover with foil, and bake in a 400°F oven for 1 ½ to 2 hours, until juices run clear when cut near the leg joint.  Scrub the potatoes and place in a saucepan.  Cover with water and bring to a simmer for 15-20 minutes, until the potatoes are tender.  Drain and allow to dry a bit.  Melt the butter and stir in the parmesan.  Place the potatoes on a rimmed baking tray and smash with a spoon.  Drizzle with the butter mixture and bake in a 425°F oven for 15-20 minutes, until crisp.  Steam the broccoli to desired doneness.

 

Meal 2:  Turkey Nachos  $7.66

  • 1 lb ground turkey
  • 2 pkg Meijer taco seasoning
  • 1 bag Meijer tortilla chips
  • ½ bag Meijer shredded cheddar cheese
  • 8 oz Daisy sour cream
  • ½ lb roma tomatoes, diced
  • ¼ lb Spanish onion, diced

Directions:  Brown the turkey until no pink remains, breaking up as it cooks.  Add the seasoning as directed on the package.  Place the tortilla chips on a rimmed baking sheet; top with meat, cheese, tomatoes, and onion.  Bake in a 375°F oven until crisp, about 5 minutes.  Top with sour cream.

 

Meal 3:  Oven Roasted Pork Loin with Salad  $7.66

  • 2 lb boneless pork loin
  • Salt & pepper (pantry)
  • 1 bag Dole Salad blend
  • ½ lb Roma tomatoes, chopped
  • 1 cucumber, sliced
  • Salad dressing of choice (pantry)

Directions:  Place the pork loin in a roasting pan and sprinkle with salt and pepper.  Cover with foil and bake in a 400°F oven for 1 ½ hours or until no pink remains.  Remove from oven and let rest for 10 minutes.  Place the remaining ingredients in a bowl and serve.

 

Meal 4:  Chinese Spare Ribs with Rice and Asparagus  $5.06

  • 2 lb pork spare ribs
  • 6 T hoisin sauce (pantry)
  • 2 T ketchup (pantry)
  • 2 T honey (pantry)
  • 2 T soy sauce (pantry)
  • 1 T rice vinegar (pantry)
  • 2 t lemon juice (pantry)
  • 2 t grated ginger (pantry)
  • 1 t grated garlic (pantry)
  • ½ t Chinese 5 Spice powder (pantry)
  • 1 lb asparagus
  • 2 C rice (pantry)
  • 4 C water (pantry)

Directions:  Place the ribs in a slow cooker.  Mix the hoisin, ketchup, honey, soy sauce, vinegar, lemon juice, ginger, garlic, and 5 spice powder in a bowl and pour over the ribs.  Cover and set to low for 6-8 hours.  Saute the asparagus with a little butter until tender crisp.  Place the rice and water in a sauce pan.  Cover and bring to a simmer for 15-20 minutes, until the rice is tender.  Serve the ribs over the rice with the asparagus on the side.

 

Meal 5:  Lemon Baked Cod with Green Beans  $5.46

  • 1 lb frozen Meijer cod, thawed and patted dry
  • ½ stick butter, melted (pantry)
  • 2 T lemon juice (pantry)
  • ¼ C flour (pantry)
  • ½ t salt (pantry)
  • ¼ t pepper (pantry)
  • Paprika
  • 1 ½ lb green beans, ends removed

Directions:  Mix the butter and lemon juice in a bowl.  In another bowl, mix the flour, salt, and pepper.  Dip the cod in the butter mixture then coat with the flour mixture.  Place on a rimmed baking sheet and sprinkle with paprika.  Bake in a 350°F oven for 25-30 minutes, until the fish flakes easily with a fork.  Steam the green beans until crisp tender.  Serve with butter and lemon juice if desired.

 

Meal 6:  Beef and Broccoli Over Rice  $4.03

  • 1 lb ground beef
  • ½ broccoli, chopped
  • 1 red pepper, chopped
  • 1 clove garlic, minced (pantry)
  • 1 onion, chopped (pantry)
  • ⅓ C soy sauce (pantry)
  • 2 T brown sugar (pantry)
  • 1 t ground ginger (pantry)
  • 2 C rice
  • 4 C water

Directions:  Brown the ground beef in a saute pan; drain any fat and add the broccoli, red pepper, and onion.  In a bowl, mix the garlic, soy sauce, brown sugar, and ground ginger.  Pour in with the beef.  Saute until sauce thickens.  While beef is cooking, place rice and water in a sauce pan.  Cover and bring to a simmer for 15-20 minutes, until rice is tender.  Serve the beef over the rice.
