Meijer Meal Planning Week 4/22: 6 Meals for $43 Bucks

For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $50, along with a few things from your pantry! You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)
- This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
- All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates )
Meal 1: Barbecue Chicken with Baked Beans $7.79
- 2 lb boneless/skinless chicken breasts
- 2 cans Bush’s Baked Beans, any variety
- 1 bottle Open Pit barbecue sauce, any flavor
Directions: Place the chicken breasts in a baking dish and pour ¼ of the barbecue sauce over the top. Cover with foil and bake in a 400°F oven for 1 hour. Uncover and baste with more sauce. Bake another 15 minutes or until chicken is cooked throughout. Heat the beans to simmering.
Meal 2: Enchilada Bake $8.67
- 1 lb ground beef
- 1 28 oz can Herdez enchilada sauce
- 1 18 ct pkg La Banderita corn tortillas
- 1 pkg Kraft shredded cheddar {check out the awesome deal on cheese HERE this week}
Directions: Brown the ground beef and drain. Line a 9×13 pan with corn tortillas. Layer the beef and cheese with tortillas, holding ½ C of cheese back for the top. End with a layer of tortillas. Pour the sauce over the top, cover, and bake in a 400°F oven for 45 minutes. Uncover and sprinkle with cheese. Bake another 10 minutes. Serve with sour cream if desired.
Meal 3: Pulled Pork Sammies with Corn on the Cob $11.05
- 5 lb pork shoulder butt
- 1 pkg Meijer hamburger buns
- 8 ears corn on the cob, shucked
- Butter (pantry)
Directions: Place the pork in a slow cooker and sprinkle with salt and pepper. Cover and set to low for 6-8 hours. Pull apart the pork, discarding any fat and bones. Serve on the buns with barbecue sauce, if desired. Bring a large pot of water to a boil; add the corn and cook for 3 minutes. Remove from the water and serve with butter. Refrigerate pork leftovers for next meal.
Meal 4: Pork Fried Rice $1
- 2 C leftover shredded pork
- 2 C rice (pantry)
- 4 C water (pantry)
- 1 bag Birds Eye SteamFresh mixed vegetables
- Sesame oil (pantry)
- Soy sauce (pantry)
Directions: Place the rice and water in a large saucepan; cover and bring to a simmer for 20 minutes, until the rice is tender and the water is absorbed. In a saute pan or wok over medium high heat, add a swirl of sesame oil. Add the pork and heat. Add the rice and vegetables, continually stirring, and saute until the vegetables are heated through. Serve with soy sauce.
Meal 5: Sausage and Sauerkraut Sandwiches with Chips $8.27
- 1 pkg Oscar Mayer natural smoked sausage
- 1 bag Meijer sauerkraut
- 1 pkg Meijer hotdog buns
- 1 pkg Meijer kettle chips
Directions: Place the sauerkraut in a slow cooker. Top with the sausage. Cover and set to low for 4-8 hours. Cut the sausage into bun length links and serve in the buns with sauerkraut on top with the chips.
Meal 6: Roasted Chicken Thighs with Salad $5.68
- 1 lb boneless chicken thighs
- 1 pkg Taylor Farms Organic Chopped Salad mix
Directions: Place the chicken in a baking dish and season with salt and pepper. Cover and bake in a 375°F oven for 45-60 minutes, until the chicken is cooked through. Remove and cut into bite-sized pieces. Prepare the salad as directed on the package and top with the chicken.
