Meijer Meal Planning Week 1/31 : 6 Meals Under $50

It’s a new week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. 

For this week the Meijer Matchups posted here on Fresh Outta Time, I’ve been able to come up with a whole week’s worth of dinners that will cost $50, along with a few things from your pantry!   You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)

  • This is based on a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.

Meal 1:  Grilled Kielbasa with Sauerkraut and Tots  $5.42

  • 1 pkg Eckrich kielbasa
  • 1 can Frank’s sauerkraut
  • 4 Meijer hotdog buns
  • 1 pkg Meijer tater bites
  • Olive oil (pantry)
  • Salt (pantry)

Directions:  Grill the kielbasa until the skin is crisp.  Heat the sauerkraut to simmering. Cut the sausage into 4 pieces and serve with the kraut in buns.  Place the tater bites on a rimmed baking sheet and drizzle with olive oil. Season with salt and bake as directed on the package.

 

Meal 2:  Teriyaki Salmon with Rice  $6.99

  • 1 lb Atlantic salmon
  • 3 T honey (pantry)
  • ¼ C soy sauce (pantry)
  • 3 cloves garlic, minced (pantry)
  • 1 T sesame or olive oil (pantry)
  • 2 C rice (pantry)
  • 4 C chicken stock or water (pantry)

In a plastic zippy bag, place the honey, soy sauce, garlic, and oil; mix well.  Add the salmon and allow to marinate in the refrigerator at least an hour, preferably overnight.  Place the salmon on a rimmed baking sheet and bake in a 425°F oven until the fish flakes easily with a fork, about 10-15 minutes.  Place the rice and liquid in a saucepan. Cover and bring to a simmer for 15 minutes or until the rice is tender and the liquid is absorbed.  Serve the salmon over the rice.

 

Meal 3:  Barbecue St. Louis Spareribs with Easy Mac & Cheese  $11.78

  • 2 lbs St. Louis style pork spareribs
  • 1 18 oz bottle Sweet Baby Ray’s barbecue sauce
  • 1 box Meijer elbow macaroni
  • 1 pkg Meijer cream cheese, cut into small pieces
  • 2 8oz bags Meijer shredded cheddar cheese
  • ½ C milk (pantry)

Directions:  Prepare the pasta as directed on the package and drain.  In a greased casserole dish, mix the macaroni, cheeses, and milk.  Cover and bake in a 350°F oven for 1 hour or until the cheese is melted and bubbling.  Broil or grill the ribs, basting with the sauce, until cooked throughout.

 

Meal 4:  Roasted Lemon Oregano Chicken Thighs with Corn Tomato Salad  $3.38

  • 1 ½ lb chicken thighs
  • Salt and pepper (pantry)
  • Olive oil (pantry)
  • 1 lemon, sliced thin (pantry)
  • 1 T oregano (pantry)
  • ½ onion, diced (pantry)
  • 3 cloves garlic, minced (pantry)
  • Pinch red pepper flakes, optional (pantry)
  • ¾ C chicken stock (pantry)
  • 3 ears corn, husks removed
  • 1 lb Roma tomatoes, diced
  • ¼ C red wine vinegar (pantry)
  • ¼ C olive oil (pantry)
  • ½ t salt (pantry)
  • ½ t pepper (pantry)
  • ¼ t basil (pantry)

Directions:  Bring a pot of water to a boil and add the corn.  Cook 3 minutes, remove and allow to cool. Cut the kernels from the cob and place in a bowl with the tomatoes, vinegar, ¼ C olive oil, salt, pepper, and basil.  Chill. Season the chicken with the salt and pepper. Heat an ovenproof saute pan over medium-high heat. Add the oil and chicken, skin side down, browning the chicken and turning after 10 minutes.  Sprinkle the lemon slices over the chicken. Place the pan in a 425°F oven and bake for 8 minutes, until the chicken is cooked throughout. Place the chicken on a plate and add the oregano, onion, garlic, and pepper flakes to the pan.  Stir and saute over medium heat for 1 minute. Add the chicken stock and reduce by half. Add the chicken back to the pan, turn to coat, and serve with the salad.

 

Meal 5:  Beefy Enchilada Bake  $12.62

  • 1 ½ lb ground beef
  • 1 large onion, diced (pantry)
  • 1 16 oz pkg La Banderita corn tortillas
  • 1 pkg Meijer shredded cheddar cheese
  • 1 28 oz can Meijer red enchilada sauce
  • 1 16 oz container Meijer sour cream

Directions:  Brown the ground beef and onion until no pink remains; drain.  In a 9×13 pan, layer the tortillas, meat mixture, and cheese. End with a tortilla layer.  Pour the enchilada sauce over the top, cover with foil, and bake in a 350°F oven for 1 hour.  Serve with the sour cream.

Meal 6:  Breaded Pork Chops with Chopped Kale Salad  $9.98

  • 1 ½ lb center cut bone-in pork chops
  • 1 pkt Shake n Bake, any variety
  • 1 family sized bag Taylor Farms chopped kale salad

Directions:  Prepare the pork chops per the Shake n Bake package directions.  Prepare the salad as directed on the package.

This week, six delicious meals will cost only $50.17.
