Meijer Meal Planning Week 8/31: 7 Meals Under $55

This is the fourth week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers. You can find more Meijer Meal Planning ideas HERE (including the Non- GF Meals 7 meals under $60 for this week!)
For this week, using the Favado App and our Meijer Weekly Ad & Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $60, along with a few things from your pantry! We aren’t talking everything from a box either!
- This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
- All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates 8/31-9/6)
Meal 1 – Baked Pasta $9.03
2 jars Prego pasta sauce, any variety
2 boxes Mueller’s Pasta Twists
1 pkg Meijer Italian sausage, sweet or hot
Directions: In a skillet, brown the sausage. Carefully cut it into slices and continue cooking until no pink remains. While the sausage is cooking, boil the pasta until nearly cooked; drain. In a large oven safe dish, mix the pasta, sausage, and pasta sauce. Cover and bake 20 minutes in a 350°F oven, until bubbly. You can top this with cheese if you like.

Meal 2 – Coq au Vin (fancy for Chicken with Wine) $8.42
2 lb chicken drumsticks
2 pkg white mushrooms, cleaned and stems removed
2 onions (pantry), diced
2 C dry red wine (pantry)
5 lb Klondike Rose potatoes, diced
milk (pantry)
butter (pantry)
Directions: In a large, oven safe dish, place the chicken, mushrooms, onions, and wine. Salt and pepper. Cover tightly and bake in 350°F oven for 1 ½ hours. Boil the potatoes and mash with butter and milk. Serve together.
Meal 3 – Ground Beef Stew $8.25
1 lb ground round
2 onions (pantry), diced
4 cloves garlic (pantry), diced
3 cans Meijer dark red kidney beans, including juice
1 loaf Vienna bread
Directions: In a stock pot, brown the ground beef, onions, and garlic until no pink remains in the meat. Add the kidney beans, salt, and pepper, as well as 6 cans-full of water. Simmer 30 minutes to an hour. Serve with sliced bread.
Meal 4 – Easy Chicken and Rice with Veggies $6.25
2 lb chicken thighs
2 boxes Chicken Rice A Roni (I’m substituting mine with whole grain rice)
1 bag SteamFresh veggies
Directions: Place the chicken in an oven safe baking dish. Salt and pepper, cover, and bake in a 350°F oven for about an hour, until chicken is tender and cooked through. Allow to rest while preparing the Rice a Roni and veggies according to the package directions. Serve hot.
*I’m doing my Chicken Casserole this week, also known as Hot Chicken Salad. It’s also easy and budget-friendly. Gotta love easy casseroles on a busy school night!
Meal 5 – Toasted Cheese Sammies with Soup $6.17
1 loaf Soft & Good Bread
1 pkg Kraft American Singles
butter
2 cans Campbell’s Chunky Soup
Directions: Make toasted cheese as usual. Heat soup according to package directions. Serve hot.
*Another option instead of Toasted Cheese Sammies, is Grilled Cheese Rollups.
Meal 6 – Cheesy Tuna Bake $5.68
2 cans Starkist tuna, drained
1 pkg Meijer shredded cheddar cheese
2 pkg Meijer Shells and Cheese
Directions: Make Shells and Cheese per package directions. Place in an oven safe baking dish and mix in the tuna. Top with the shredded cheese. Bake in a 350°F oven for 30 minutes, covered. Serve hot.
Meal 7 – Chef Salad with Homemade Pretzel Croutons $7.99
1 bag Dole Salad Blends, any variety
1 hothouse cucumber, diced
½ pkg Compari tomatoes, diced
¼ lb Markets of Meijer smoked turkey, diced
2 Pretzel rolls, cut into bite-sized cubes
2 T olive oil (pantry)
Salad dressing of choice (pantry)
Directions: Heat oven to 425°F. Place the pretzel cubes on a rimmed baking sheet and drizzel with olive oil. Stir to coat. Bake in oven until crispy, about 10 minutes. (Watch closely so they don’t burn!) Make a salad from the remaining ingredients. Top with croutons.
