Meijer Meal Planning Week 9/28: 7 GF Meals Under $60

This is the week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers and it’s all about Gluten Free Meals. You can find more Meijer Meal Planning ideas HERE (including the Non- GF Meals 7 meals under $60 for this week!)
For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $60, along with a few things from your pantry! We aren’t talking everything from a box either! These are pretty healthy meals, at a low Meijer price that will be pretty quick and easy to make any night of the week. You can also print out my FREE Meal Planning printables that will help you plan and organize your meals each week! (this is always super helpful for me!!)
- This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
- All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates 9/28-10/4 )
It’s a great week at Meijer for gluten free families! There are lots of great items on sale, some even buy one get one free, that are perfect for a clean foods or gluten free diet. Check out this week’s worth of meals that I put together for under $60!
Meal 1 – Baked/Grilled Marinated Chicken with Squash and Potatoes $4.74
- 2 lb Split chicken breasts
- 2 cloves garlic, minced (pantry)
- 1 T oregano (pantry)
- 1 t basil (pantry)
- ¼ C olive oil (pantry)
- ¼ C apple cider vinegar (pantry)
- 1 (2 lb) butternut squash
- 3 T butter (pantry)
- ¼ C brown sugar (pantry)
- 4 Russet potatoes
- butter (pantry)
Directions: Place the chicken in a plastic zippy bag. Pour in the garlic, oregano, basil, olive oil, and vinegar. Seal the bag and shake. Place in the refrigerator for a few hours or overnight (the longer, the better). Heat oven to 350°F. Remove the chicken from the bag and place in a baking dish. Pour the marinade over the top. Cover with foil and bake for 1 ½ hours, until the chicken is cooked throughout. While the chicken is baking, cut the squash in half lengthwise and clean out the seeds. Split the 3 T butter and brown sugar between the two halves and fill the seed areas. Place in a baking dish and cover with foil. Place in the oven with the chicken and bake about 1 hour, until the flesh of the squash in tender. At the same time, wash the potatoes and poke with a fork. Place in the oven and bake about and hour. Serve all hot.
Meal 2 – Barbecued Ribs and Fries $7.97
- 3 lbs Country Style Ribs
- 1 bottle barbecue sauce, any style (pantry)
- 1 bag Meijer frozen fries
Directions: Place the ribs in a crock pot. Top with barbecue sauce. Cover and set to low for 6-8 hours. Bake fries according to package directions. Serve hot with lots of napkins.
Meal 3 – Mexican Chicken and Rice $7.76
- 2 lbs split chicken breasts
1 C rice (pantry)
1 can black beans, rinsed
1 can corn, rinsed
1 can diced tomatoes
1 packet fajita seasoning (pantry)
1 ½ C water
1 C shredded cheddar cheese
Directions: Remove the skin and bones from the chicken by sliding a thin sharp knife between the bones and meat. Cut the meat into bite sized pieces. In a deep saute pan, brown the chicken, adding olive oil if needed. Add in the rice, beans, corn, tomatoes (with the juice), seasoning, and water. Cover and simmer 20 minutes, until rice is tender. Serve with the cheese.
Meal 4 – Zuppa Toscano $7.28
- 1 pkg Johnsonville Italian Sausage
- 5 C chicken stock (pantry)
- 2 potatoes, scrubbed and diced
- ½ pkg Organic baby kale
- 1 C half n half
Directions: Partially freeze the sausage and slice into pieces. Place in a stock pot and saute until cooked through and no longer pink. Add the chicken stock and potatoes. Simmer until the potatoes are tender. Add the kale and half n half. Bring back up to a simmer. Add salt and pepper as desired. Serve hot.
Meal 5 – Hot Dogs, Barbecued Beans, and Peas $6.49
- 1 pkg Hebrew National hot dogs
- 2 cans Bush’s Best Pinto Beans
- 1 C barbecue sauce (pantry)
- 1 pkg green giant frozen peas
Directions: Cook the hot dogs your favorite way. Drain and rinse the beans. Place in a small saucepan and mix with barbecue sauce. Simmer 15 minutes or more, until heated through and beans pop a little bit. Cook the peas according to the package directions. Serve all hot, or cut the hot dogs and add to the beans.
Meal 6 – Baked Cod with Autumn Salad $15.01
- 2 lb cod filets
- 1 T butter (pantry), cut into fine pieces
- lemon pepper (pantry)
- 1 pkg Organic salad mix
- ½ lb tomatoes on the vine, diced
- 1 lb Honey Crisp apples, peeled and diced
- Salad dressing of choice
Directions: Heat oven to 425°F. Place the cod on a baking sheet and sprinkle with lemon pepper. Bake until fish flakes easily with a fork and is opaque throughout. Dot with the butter and allow to melt. Make a salad from the remaining ingredients. Serve together.
Meal 7 – “Fried” Chicken Tenders, Fries, and Vegetables $7.25
- 2 lb split chicken breasts, bones and skin removed
- 3 C corn tortilla chips, any flavor, crushed
- 3 eggs, whisked (pantry)
- 1 bag Meijer frozen fries
- 1 pkg Green Giant vegetables, any flavor
Directions: Heat oven to 425°F. Cut the chicken into strips. Place the eggs and chips in separate, shallow bowls. Dip the chicken in the egg then coat in the chips. Place on a baking tray sprayed with non-stick cooking spray. Bake 20-30 minutes, until the chicken is no longer pink in the middles. At the same time, bake the fries according to package directions. Cook the vegetables in the method you prefer. Serve together, hot, with dipping sauces of your choosing.
These seven gluten free Meijer meals come out to a grand total of $56.50 for a family of four! Not bad for some great dinners!
