Meijer Meal Planning Week 9/7: 7 Gluten Free Meals Under $60

This is the fifth week of bringing you these awesome budget friendly meal planning for all of you Meijer Shoppers and it’s all about Gluten Free Meals. You can find more Meijer Meal Planning ideas HERE (including the Non- GF Meals 7 meals under $60 for this week!)
For this week, using the Favado App and our Meijer Matchups posted here on A Mitten Full Of Savings, I’ve been able to come up with a whole week’s worth of dinners that will cost you less than $60, along with a few things from your pantry! We aren’t talking everything from a box either! These are pretty healthy meals, at a low Meijer price that will be pretty quick and easy to make any night of the week.
- This is based off of a family of 4-5- so you will need to adjust it accordingly for a bigger or smaller family.
- All items are on sale or part of the lower Meijer price. If you don’t have the pantry items, then you will need to add those into your final price. (sale dates 9/7-9/13)
I’ve put together some great meals that are not only gluten free, but also fairly low fat and generally healthy for you. Full of flavor, you and your family will have a tasty week!
Meal 1 – Roasted Chicken with Rice and Veggies $11.23
- 1 whole chicken, around 4 lbs
- Seasonings (pantry)
- 2 packages Uncle Ben’s Ready Rice, any flavor
- 1 bag Meijer frozen vegetables, any variety
Directions: Rinse out the chicken and place in a baking dish. Season well and bake in a 350°F oven for 1.5-2 hours, until tender and cooked through. Prepare the rice and vegetables according to package directions. Note: reserve ½ chicken and juices for tomorrow.
Meal 2 – Chicken and Biscuits $2
- Leftover chicken, diced
- Chicken juices
- Tapioca starch (pantry)
- Bag Meijer mixed vegetables
- gluten free baking mix (pantry)
Directions: Heat the chicken juices and add enough tapioca starch to make a gravy. Add the chicken and vegetables and bring to a simmer. While the chicken and vegetables are heating, prepare biscuits according to the baking mix instructions. To serve, place a biscuit in a bowl and ladle gravy mixture over the top.
Meal 3 – Turkey Meatloaf and Stewed Tomatoes $7.17
- 2 lb Jennie-O ground turkey
- bread crumbs (pantry)
- 2 eggs (pantry)
- seasonings (pantry)
- 3 cans Del Monte diced tomatoes
- 1 T oregano (pantry)
- 1 T garlic (pantry)
Directions: In a bowl, mix the turkey, bread crumbs, eggs, and seasonings. Form into a loaf and bake in a 350°F oven about 1 hour, until cooked through. Place the tomatoes, juice included, in a saucepan. Add the oregano and garlic. Bring to a simmer. Serve hot.
Meal 4 – Turkey Tacos $6.98
- 1 lb Jennie-O ground turkey
- Ortega taco shells
- 1 can Del Monte diced tomatoes
- Taco seasoning (pantry)
- ½ block Meijer cheddar cheese, shredded
Directions: Brown the turkey and add the taco seasoning, following directions on the package. Heat the taco shells in the oven and serve.
Meal 5 – Catfish and Salad $15.77
- 2 lbs catfish
- Lemon pepper seasoning (pantry)
- 1 pkg Dole Classic Romaine
- 1 lb tomatoes on the vine
- Salad dressing of choice (pantry)
Directions: Rinse the fish and place on a baking sheet. Sprinkle liberally with seasoning. Bake in a 400°F oven until fish is tender and flakey. Make a salad with the remaining ingredients.
Meal 6 – Baked Chicken, Mashed Potatoes, and Vegetables $8.64
- 3 lb split chicken breasts
- seasonings (pantry)
- 1 bag Meijer frozen vegetables
- 1 5 lb bag round white potatoes, peeled and diced
- milk (pantry)
- butter (pantry)
Directions: Place the chicken in a baking dish. Sprinkle with the seasonings of your choice. Cover with foil and bake 1 hour, until chicken is no longer pink in the thickest part. While the chicken is baking, boil the potatoes until tender and mash with butter and milk. Heat the vegetables. Serve hot. Reserve 1 chicken breast for tomorrow.
Meal 7 – Chicken Salad Lettuce Wraps $2.48
- 1 leftover chicken breast
- mayonnaise (pantry)
- 1 lb grapes, cut in quarters
- Iceberg Lettuce, separated into leaves
Directions: Dice the chicken and make a salad with the mayonnaise and grapes. Place in the lettuce leaves and wrap like a burrito. Serve.
These seven amazing meals will come out to about $54.27, and they are all gluten free!
