We love sheet pan meals since there is so little cleanup. These Sheet Pan Baked Chicken Fajitas are a personal favorite. They are delicious, full of flavor, and so easy to make! I can throw this together, pop in the oven, and spend more time catching up with my family about their day. Served with tortillas and all of the toppings, they can also be a healthier option for many!
Sheet Pan Baked Chicken Fajitas
If you haven’t already, I highly recommend investing in silicone baking mats for use with your sheet pans. They make cleanup much easier, and are ideal for keeping your food from sticking to the pan. I love this, especially when trying to eat healthier. It gives me the ability to use less oil
While we used a purple bell pepper in these sheet pan-baked chicken fajitas, they are hard to find in stores. This one came from a farmer’s market, so if you can’t find one locally, just choose another bell pepper. I love the colorful look on my plate, but it isn’t necessary for great flavor.
Ingredients for Sheet Pan Baked Chicken Fajitas:
- 1 pound of chicken breast, thinly sliced
- 2 ½ bell peppers, sliced (or ½ of a Red, Orange, Yellow, Green, and Purple pepper to get the rainbow effect)
- 1 onion, sliced
- ¼ cup olive oil
- 1 1/2 tablespoons chili powder
- 1 teaspoon cumin
- ½ teaspoon garlic powder
- 1 teaspoon salt
- ¼ teaspoon pepper
Directions for Sheet Pan Baked Chicken Fajitas:
- Preheat oven to 400 degrees F.
- Combine olive oil and spices in a small bowl.
- Cover a large sheet pan with foil.
- Place the chicken and veggies on the pan and pour the oil and spice mixture over the top.
- Toss to combine. Spread the chicken and veggies evenly on the pan, so they are in a single layer.
- Bake for 25 minutes or until chicken is cooked through and veggies are softened.
- May be served with warm tortillas, plain Greek yogurt (or sour cream), guacamole, salsa, lime
wedges and fresh cilantro.
