Spinach and Caramelized Onion Quiche Recipe
One of my favorite versatile vegetarian meals to make is quiche. With many variations and super easy prep it’s a go to on those times when I don’t have a lot in my refrigerator to work with. This is our personal favorite recipe since we love the flavor combinations and it’s easy to dress up for a special dinner with guests. I am including my favorite pie crust recipe but if you prefer any ready-made refrigerated pie crust will work nicely as a substitute.
Spinach and Caramelized Onion Quiche Recipe
1 Pie Crust (recipe below)
8 Large Eggs
1 Tablespoon Olive Oil
1 10oz package frozen chopped spinach – thawed and drained of excess water
1 large yellow onion sliced thin
1 tablespoon minced garlic
½ Cup Shredded Mozzarella
¼ Cup Grated Romano Cheese
1 Teaspoon Salt
1 Teaspoon Black Pepper
PIE CRUST
2 ½ Cups All Purpose Flour
1 Cup Unsalted Butter or Shortening
1 Teaspoon Salt
¼ Cup Ice Water
In medium bowl mix together flour, salt and butter or shortening until well blended and making pea sized chunks. Gradually mix in water until mixture forms dough. Roll out on slightly floured surface and place in deep pie plate.
Heat olive oil in large skillet cooking sliced onions and garlic for 10-12 minutes on medium heat. Stirring occasionally allow to brown but not burn. Remove from heat and set aside.
Preheat oven to 350 degrees. In large bowl, whisk eggs, salt and pepper. Stir in caramelized onions, drained spinach and cheeses. Pour into waiting pie crust. Cook for 30-35 minutes at 350 degrees or until set in center and golden brown on top.
