Instant Pot Teriyaki Beef Stir Fry
A little trick to make prep for this easier is to grab the carrots already sliced in your produce section. It is typically only marginally more expensive and saves tons of prep time while keeping them the consistent size you want for a stir-fry. We also like to grab round steak for this recipe since it is usually lean and a less expensive cut that when cooked in this method ends up being tender and delicious.
You can use an Instant Pot or any brand of electric pressure cooker you prefer or have on hand for this recipe. We just prefer our Instant Pot 6-Quart DUO60 so directions below are for that particular option.
Ingredients for Teriyaki Beef Stir Fry
- 1 lb lean beef, cubed or cut into strips
- 1/2 onion, diced
- 1-1/2 cups orange juice
- 1/4 cup soy sauce
- 1 teaspoon garlic powder
- 1 teaspoon ground ginger
- 3 tablespoons brown sugar
- 1/8 teaspoon red pepper flakes (optional)
- 1/2 red bell pepper, chopped
- 1/2 cup matchstick carrots
- 1 broccoli crown, cut into pieces
- 2 tablespoons cornstarch mixed with 2 tablespoons cold water (optional)
- 4 cups cooked white rice
Directions for Teriyaki Beef Stir Fry in the Instant Pot
- Place beef and onion into the instant pot and saute until beef is browned.
- Add orange juice, soy sauce, garlic powder, ginger, brown sugar, red pepper flakes, and vegetables and mix well.
- Place the lid on the instant pot and seal shut. Close the pressure release valve. Set the instant pot to manual, high pressure for 5 minutes. When the cooking cycle is complete, quick release pressure.
- If desired, use the cornstarch and water slurry to thicken the sauce. With the pot open, set to sautee and heat until mixture bubbles and boils. Stir in cornstarch and remove from heat once thick. Serve over white rice.
